Harvesting ice, tapping maple trees, collecting eggs... and deciphering a 126-year-old recipe? Just another day at Kline Creek Farm. When we're doing historical cooking demonstrations, we often discover that old recipes leave plenty open to interpretation. This 1900 maple ice cream recipe simply says, "freeze." But what did that mean? Freeze it in a mold? Churn it in an ice cream freezer? With no further instructions, we had to experiment to figure out what the original cook likely intended.

To celebrate America’s 250th anniversary, District staff, volunteers, and community members are taking on a unique challenge: creating an American flag entirely from scratch using historic methods and materials sourced right here in DuPage County. Follow along as we document every step of the journey, from selecting local wool and spinning the yarn to weaving and dyeing the fabric, then felting the stars and hand-sewing the flag together. The babies are in the house! The Great Plains Mudbug eggs have started hatching at the Urban Stream Research Center, and the young are keeping mom busy. They will hang out on mom for a few days to a week after hatching, as mom provides great protection and makes sure they have plenty of oxygenated water by continually fanning them. Within days they’ll be moving off of mom and exploring the world on their own for the next year, at which point they’ll be released back into the wild to help augment habitat for the federally endangered Hine's emerald dragonfly. See juvenile crayfish clinging to and climbing on mom. The floating material in the video is food and other particulates stirred up by mom as she fans the young and moves around.
