𝗜𝗻𝗰𝗿𝗲𝗮𝘀𝗲 𝗟𝗮𝗰𝘁𝗼𝗳𝗲𝗿𝗿𝗶𝗻 𝗽𝗿𝗼𝗱𝘂𝗰𝘁𝗶𝗼𝗻 𝗯𝘆 𝗟𝗙-𝘀𝗲𝗹𝗲𝗰𝘁𝗶𝘃𝗲 𝗺𝗶𝗹𝗸 𝗽𝗿𝗼𝗰𝗲𝘀𝘀𝗶𝗻𝗴 Bovine milk has fluctuating levels of Lactoferrin (LF), often by several tens of mg/L, due to factors such as stage of lactation, milk yield, somatic cell count, microbial exposure, feed intake, animal stress, and environmental conditions. 𝗧𝗵𝗶𝘀 𝗿𝗮𝗶𝘀𝗲𝘀 𝗮𝗻 𝗶𝗻𝘁𝗲𝗿𝗲𝘀𝘁𝗶𝗻𝗴 𝗼𝗽𝗽𝗼𝗿𝘁𝘂𝗻𝗶𝘁𝘆 𝗳𝗼𝗿 𝗱𝗮𝗶𝗿𝘆 𝗽𝗿𝗼𝗰𝗲𝘀𝘀𝗼𝗿𝘀: 𝗛𝗼𝘄 𝗰𝗮𝗻 𝗳𝗹𝘂𝗰𝘁𝘂𝗮𝘁𝗶𝗻𝗴 𝗟𝗙 𝗹𝗲𝘃𝗲𝗹𝘀 𝗯𝗲 𝗲𝘅𝗽𝗹𝗼𝗶𝘁𝗲𝗱 𝘁𝗼 𝗶𝗻𝗰𝗿𝗲𝗮𝘀𝗲 𝘁𝗵𝗲 𝗟𝗙 𝗽𝗿𝗼𝗱𝘂𝗰𝘁𝗶𝗼𝗻? Troy Walton joined Mozza a couple of weeks ago and this is what he's already been working on. Mozza grows real dairy casein inside soybean seeds. But the seeds also contain the plant's own native soy proteins. To produce a clean dairy ingredient, the two need to be separated. This is Mozza's benchtop version of the large-scale filtration systems already used across the dairy industry. Casein micelles are significantly larger than soy proteins. That size difference is the entire separation advantage, the micelles are too large to pass through the membrane, so they are retained and concentrated while the soy proteins flow through. 👉 Casein held back. 👉 Soy protein washed away. 👉 Purified casein stream retained. 👉 No new infrastructure. 👉 Standard dairy filtration equipment. The same process that already exists at commercial scale in dairy processing plants globally. This is what getting from greenhouse to commercial supply actually looks like.

A snack manufacturer may use it to control moisture after drying. A grain processor may use it to segregate incoming lots. The technology is the same. The value is not. The real question is never: "𝘋𝘰 𝘸𝘦 𝘯𝘦𝘦𝘥 𝘕𝘐𝘙?" The real question is: "𝘞𝘩𝘢𝘵 𝘥𝘦𝘤𝘪𝘴𝘪𝘰𝘯 𝘢𝘳𝘦 𝘸𝘦 𝘵𝘳𝘺𝘪𝘯𝘨 𝘵𝘰 𝘮𝘢𝘬𝘦 𝘧𝘢𝘴𝘵𝘦𝘳?" Membrane filtration in dairy plays a different role than it does in water treatment. 💡 In water applications, filtration has one role: removing unwanted substances to produce cleaner water. The permeate is the only stream of interest. In dairy, however, both permeate and retentate can contain valuable components.
