A dietitian can approve a product. That doesn't mean the kitchen floor will actually use it. This is the gap a lot of institutional buying decisions miss. Clinical sign off covers whether something is appropriate for residents or patients. It says nothing about whether the staff plating three hundred meals a shift will bother picking it up consistently, especially if it adds even a few seconds per tray or requires remembering an extra step. The products that actually get used long term in aged care and hospital kitchens tend to share one thing: they slot into an existing workflow instead of adding to it. No new prep step. No separate storage requirement. No training session needed to explain how it works. Last week, our NHS Scotland Assure colleagues who work closely with Catering Managers across NHS Scotland were delighted to join colleagues at NHS Fife as part of their new-start induction Programme, helping shine a light on one of the wider responsibilities that come with delivering high-quality patient care – patient food ordering. From front-line care professionals who help patients choose their preferred meals to help reduce uneaten food, to the general effort of helping keep food waste a conversation in the workplace, the induction last week provided an opportunity to discuss how everyone can play a vital role in reducing food waste across NHS Scotland. This effort is part of a wider awareness campaign led by NHS Scotland’s Catering Expert Group highlighting how small actions taken across wards, care settings, and offices can collectively make a significant difference in reducing food waste, whilst contributing positively to the patient experience, environmental sustainability and the efficient use of NHS resources. A big thank you to NHS Fife for the opportunity to collaborate.
