Clean-label demand may start with consumer expectations, but food manufacturers have to solve the day-to-day production realities behind it. At the Institute of Food Technologists (IFT) IFT FIRST event Monday in Chicago, Ill., food industry leaders discussed the challenges of meeting demand for natural and clean-label ingredients. One of those challenges is time, according to Catherine Vinci, Technical Manager at Givaudan Health & Functional. “It takes time to validate all of these solutions, and the consumer wants to move fast,” Vinci said. “We’re changing the base of the product, so we’re going to encounter some ingredient interactions and find out two ingredients don’t work well together. It’s really about how to move fast, and how to manage expectations and make a good product in the meantime.” Ingredient companies are also balancing clean-label demand against larger food system pressures, using innovations like new texture solutions, precision fermentation, and plant-derived materials, added Cordell Hardy, VP, North America R&D – Food Enterprise at Cargill. “We have more tools at our disposal to meet an increasingly challenging need around transparency, and rebalancing to make new products aligned with emerging consumer desire, or the same product in different ways to help overcome supply chain, geopolitical, or regulatory constraints,” Hardy said. “Innovation is allowing us a mechanism for taking different manufacturing methods or feedstocks and translating them to not just edible, but preferred, or satisfying food solutions that people are going to pay for.”

“We recognize more and more evidence that ultraprocessed foods should be avoided and there are more people looking to make different choices in the grocery store. That is very difficult to do by just looking at an ingredient panel and deciphering it. Ingredient panels don’t tell you the whole backstory of how products were grown and how they were produced. And, therefore, certification really was the only approach that could get to the clarity and visibility we thought was required. Other brands agreed, and there was a group of us that came together, along with a group of scientists and nutritionists. So the initiative wasn’t just brand-led. The certification means we understand how to verify different aspects of our supply chain, all the way down to what our suppliers do." Interested iInnovation Sometimes Starts with Looking at Food Differently. While preparing oranges for dehydration today, I almost discarded the peels. That simple moment reminded me that food processing isn't just about producing food it's also about recognizing value where others see waste. An orange offers much more than its juicy flesh. The fruit provides vitamin C, potassium, folate, hydration, and natural sugars. The white pith, often removed because of its slightly bitter taste, is rich in dietary fiber, antioxidants, and beneficial plant compounds. Even the peel contains essential oils, fiber, and antioxidants, making it suitable for products such as orange peel powder, tea blends, baking ingredients, and spice mixes after proper processing. For those of us working in agribusiness and food processing, reducing post-harvest losses isn't only about preserving fruits and vegetables. It's also about maximizing the value we obtain from every raw material while maintaining food safety and quality. 🔍 Food Tech Explained #02 What is a Clean Label? And when can a product claim to be "Clean Label"? Walk into any supermarket today, and you'll find products proudly displaying the words "Clean Label." But here's the interesting part: There is no universally accepted legal definition of "Clean Label" in most countries, including India. So, what does it actually mean? In simple terms, a clean-label product is one that is formulated with ingredients consumers recognize and understand. The focus is on simplicity, transparency, and avoiding ingredients that many consumers perceive as artificial or unnecessary. Typically, clean-label products aim to: ✔️ Use simple, familiar ingredients. ✔️ Avoid artificial colours, flavours, and preservatives where possible. ✔️ Keep ingredient lists short and easy to understand. ✔️ Be transparent about what's inside the pack. However, "clean label" doesn't automatically mean healthier, more nutritious, or safer. For example: A product can be clean label but still be high in sugar or salt. A product containing approved food additives can still be perfectly safe. Sometimes, replacing an effective preservative with a "natural" alternative may even reduce shelf life or increase food waste if not properly designed. Can a company claim "Clean Label"? Since there is no specific regulatory definition in many jurisdictions, companies should be cautious. Any clean-label claim should be truthful, not misleading, and supported by the product's formulation and ingredient list. Manufacturers should also ensure that all mandatory food labelling regulations are fully complied with. As Food Technologists, our goal should not simply be to create products with fewer ingredients—but to develop foods that are safe, scientifically sound, transparent, and meet consumer expectations. Consumer takeaway: Instead of relying only on front-of-pack claims, turn the pack over and read the ingredient list. That's where the real story begins. “The future of food is in the past.” That’s the message you see when you open a pint of my favorite ice cream — Ice Cream For Bears. And I couldn’t agree more! The food industry is constantly evolving to meet consumers where they are, and it seems so many trends are often inspired by the past: the current beef tallow fever, paleo, raw, seed oil free, minimally processed, preservative free… Consumers are intimidated by unfamiliar ingredient names and choosing clean label alternatives instead. I love that this quote is not at odds with food innovation — it’s exactly the challenge! How do we create products that deliver great taste and align with what consumers increasingly want? In my household, where a food scientist is married to a physician who loves cooking and has several food sensitivities, our meals are surprisingly simple. We have fun innovating on our cooking methods, while relying on whole ingredients, cooking things from scratch (think tomato sauce, ketchup, bone/chicken broths, nut milk), and aiming for a healthy, balanced diet, built around minimally processed foods. 🚀 FOOD TECH MYTHS | EP.01 READY MEALS ARE FULL OF PRESERVATIVES. ARE THEY REALLY? It’s probably one of the most common misconceptions in the food industry. For many consumers, long shelf life automatically means: ❌ more preservatives ❌ more additives ❌ lower quality But is that really true? The answer is: not necessarily. Today, a product’s shelf life doesn’t depend only on the ingredients it contains. It depends, above all, on how the production process has been designed and controlled. Modern Food Technology makes it possible to create safe, long shelf-life foods by combining several key elements: 🧪 advanced stabilization technologies; 📦 high-performance protective packaging; 🌡️ precise control of time and temperature; 🔬 rigorous microbiological controls throughout the production process. The goal isn’t simply to make food last longer. The goal is to preserve safety, taste and nutritional value while minimizing the need to alter the recipe with unnecessary additives. That’s why the most important question isn’t: “How long does this product last?” The real question is: “Why does it last?” The answer to that question is what separates food produced through advanced technology from food that relies mainly on preservatives. We believe the future of food isn’t about adding more ingredients. It’s about designing smarter processes. Because real innovation isn’t what we put into food.
