For years, the challenge wasn't simply replacing sweetness, it was replacing everything sugar does. Bulk, mouthfeel, browning, crystallization and texture have all limited reformulation, particularly in confectionery. That's why this development is so interesting. From Kline + Company's work within the Alternative Sweeteners Intelligence Center, we're seeing allulose evolve from an emerging ingredient into a strategic reformulation tool. Supplier investment is increasing, production capacity continues to expand, and market participants consistently describe demand as outpacing current adoption. What stands out is the shift in industry priorities. Success is no longer measured by achieving a "reduced sugar" claim alone. Brands are increasingly focused on delivering the same indulgent sensory experience consumers expect, with fewer calories and improved nutrition. Of course, challenges remain. Cost and regulatory approval, particularly in Europe, continue to shape the pace of adoption. But the direction of travel is becoming increasingly clear.
