En Centro y Sudamérica estamos observando: Las principales micotoxinas de preocupación son Fumonisinas, Zearalenona y Deoxinivalenol. El riesgo por Fumonisina es especialmente significativo en maíz y forraje. En 2025, el riesgo de Zearalenona aumentó notablemente, especialmente en oleaginosas, cereales y derivados de maíz. El riesgo de Deoxinivalenol sigue siendo alto en maíz (47%) y cereales (41%).
